Gluten Free Brownie Cake

Sometimes I just want chocolate…. and ice cream. Being gluten free makes cravings not so convenient. I’ve seen several recipes for gluten free brownies on pinterest or the internet but I was limited by what was in my pantry. Here is what I came up with and it totally hit the spot!

Ingredients
  1. 4 eggs
  2. 1 c. coconut palm sugar
  3. 1 c. unsweetened cocoa powder
  4. 1/4 c. coconut oil
  5. 2 tsp. vanilla extract
  6. pinch of salt
Instructions
  1. Preheat oven to 350. Spray a 8 x 4 loaf pan with coconut oil spray (I get mine at Trader Joes). Add all ingredients to a medium size mixing bowl and mix until smooth. Pour mix into sprayed pan and place in preheated oven. Bake for 30 minutes. When it comes out it will not look done but place it in the refrigerator for at least an hour. Cut, sprinkle with powder sugar or serve with a scoop of ice cream!
Notes
  1. You could also add chocolate chips, chopped nuts, etc!
